Today, I am the proud owner of The Cultured Collective, sharing my passion for fermented foods with people throughout the UK. I can attribute the dramatic shift in my circumstances to a pivotal moment in my life in October 2012. Like most people in their 20s and 30s, I was struggling to balance a demanding career and social life. Love Your Gut Lunch!

Super quick and tasty food that’s good for your gut health. Makes: 1 Toastie 2 x slices of good sourdough 1 tsp of Dill Mustard Sauce 3 slices Emmental 2 slices salt beef/pastrami 3 tbsp sauerkraut Large knob butter Instruction Spread the Dill Mustard Sauce on one side of one of the slices of sourdough. Add 2 slices of Emmental, the Salt Beef and the sauerkraut. Top with another slice of Emmental and the second slice of sourdough. Butter the outside of the sandwich. Heat a frying pan over a medium-high heat until really hot. Fry the sandwich (butter side down) for 2-3 minutes until golden brown. Flip the sandwich and fry the other, buttered side.
